Christoph II Mathäi held the position of 48th provost of Klosterneuburg Monastery from 1686 to 1706. He invested a lot of time in viticulture, researched sparkling wine and was responsible for having the famous 56,000 litre barrel made. This sparkling wine is made from 100% Chardonnay using the traditional bottle fermentation method. A fine nose of pears, quince, melon and honey. On the palate, biscuity and spicy with an extremely fine mousse. Ages very well.
