A sparkling Chasselas Demi-Sec - a perfect celebration wine with Elderflower bubbles. Chasselas being relatively dry with low acidity, this demi-sec has been made with a special "liqueur". All sparkling wines made in the traditional style use a liqueur to start and balance the in-bottle fermentation but the one used in this demi-sec gives it a strong Elderflower nose and taste.
Ben says (May 2018): I managed to taste this twice over this weekend and it was as delightful as ever. On its own first and then, a couple of days later, paired perfectly with a remarkable raspberry soufflé.
