Grapes are grown in a vineyard called "Tzouma" or "Zoumaz" at the foot of the Massif du Haut de Cry. This is a dry arid site with limestone soils and a hot microclimate influenced by heat retained in the rockface above the site. Yield 60 hl/hectare. The grapes were very mature when late harvested with 95° Oechsle. Full destemming with a 21 day maceration/fermentation and twice daily pigeage followed by tank ageing until a July bottling.
A deep red with peppery wild aromas, full-bodied with dark red fruit flavours, again pepper and minerals all evident on the long finish. Good companion for lamb pasta and cheese dishes. Serve 16-18°C.
