This Dôle is made from Pinot Noir amd Gamay, grown close to Chamoson on alluvial soils composed of sand, gravel and clay, and with a high silt content. Harvesting is by hand and these grapes were picked with 92° Oechsle. The grapes are de-stemmed prior to vinification. Maceration and alcoholic fermentation takes place over a 21 day period with twice daily pigeage (punching down of the cap). The wine is then allowed to mature in concrete tanks until bottling in the July following the harvest. A dark pastel red with a nose of red berry fruit and a hint of dusty spice. The palate is dominated by fresh Gamay fruit and there is good body and structure brought by the Pinot Noir. A savoury, slightly earthy character, with excellent length and a long dry finish. Serve around 16-18°C with pâtes, red and white meats, or just on its own. Keeps 3-5 years from bottling. ABV 13%.
