This is a Fendant with a great structure. The influence of the Vétroz soil is found in the full bouquet with a strong flint note, far more than you might normally expect with Chasselas. There is also more fruit on the palate.

The grape is not unclustered and not sugared. This wine is lightly pressured. The clear must is drawn off after the solid matter has settled. The first and the second fermentations are realized under temperature control.
The appellation "Vétroz Grand Cru", limited to four grape varieties, designates wines produced according to regulations established in 1993, which require limited yields and rigorous standards of vinification. For each vintage a commission of judges inspects and certifies all plots designated as Grand Cru.
