I'm not sure I can use the word "crystalline" for another white after this wine. It is fresh, light and mineral and yet feels airy. There is a depth to this wine, layer upon layer it reveals itself slowly.
This is an oaked white but done with such magic I just love it. They made some very unusual choices and the result is... the feel of the breeze coming down from the glaciers on a sun baked summer mountain meadow. It feels Alpine yet it evokes the top whites in Bordeaux. Paradox? You bet!
Robb and Ben still strongly favour the Euterpe, but I must say Eclat is a worthy contender and would win in my books for quite a few food matches.
The First white wine in the Electus line, Eclat, comes from the 2014 vintage. It is made from two Valais grape varieties : Petite Arvine and a grape that carries the name of an opera, Aida! But we know it better by its many other names – Green Heida, Païen, Savagnin in the Jura, Traminer in Alsace. This dry wine is remarkable for its elegance, beautifully pale colour with green highlights, aromatic notes of lemon, grapefruit and rose, the crispness that recalls the fresh chill of the mountains. Thanks to its lovely citrus aromatic persistence it is appreciated as an apéritif wine as well as one that lasts throughout a meal.
The way in which Eclat is made is unique, adding a dash of originality to its character. The grapes are pressed in the manner of Champagne grapes with only juice from the first pressing retained. The wine then matures for nine months in new French oak barrels that have been heavily toasted. The goal is to eliminate any sweetness in order to underscore the tension and nervousness of the wine to accentuate its taut and crystalline side.
