More about this wine

This is one of my favourites from Simon Maye. They are famous for their reds but for me the aromatics in the Paien are just heavenly. A dry wine with much body, with aromas and flavours of citrus and quince and exceptional length.

The grapes for this wine come from 2 individual vineyards, Trémazières and Chauffisse, where gravel soils suit this variety perfectly with a yield of 45 hl/hectare. The grapes were harvested manually with 100° Oechsle and gently pressed, followed by slow alcoholic fermentation at 20°C and resting on the lees with regular batonnage. Bottled after 2 years.

Good companion for fish, sausage, beans, salted meat and even mild curry. Keeps to 10 years, serve chilled to 12°C. 13.5% ABV.

A great surprise This really surprised me - delicious! - it was both smooth and tingly at the same time. Not a grape I am used to but will have to get more.
