Not all sparkling Chasselas is a success but Yves produces a magical bottle.

It took him many years of learning and trying to get this result, understand what vines and what grapes to select for it - and it shows. A low acidity, smooth and mineral sparkling wine - a favourite not just for the Swiss abroad but also for many people who find traditional sparkling wines too acidic.

Smooth on its own and an elegant partner to oysters, seafood, sushi and many other subtle dishes.

This brut sparkling wine is made from selected grapes in the traditional method. It is left three years on the lees and then three years in the bottle before being sold.
