Goes wonderfully with foie gras, Roquefort cheese and chocolate desserts.

A dessert wine made from Sémillon and Sauvignon using cryo-extraction, where the grapes are artificially frozen to minus 7°C and then pressed. This is, in effect, an eiswein (or icewine), but as in Geneva it just doesn't freeze enough naturally, they pick and freeze the grapes. Goes wonderfully with foie gras, Roquefort cheese and chocolate desserts. Keeps to 10 years if cellared correctly.

Ben says (August 2016): A light, clean, muted yellow in colour, from a prettily labelled 50cl bottle. This is a tropical delight on the nose with banana, pineapple and mango all joined together in a sweet salad. The flavours intensify on the tongue and the honeyed richness explodes in the mouth but without any cloying unpleasantness. I adore ice wines from around the world and, frankly, don't care whether they are naturally occurring or artificially created as long as they are as delicious as this.



Tasting Notes

The wine is a pale yellow to yellow-orange and has soft aromas of citrus on the nose and lively yet gentle sweet fruit on the palate, undepinned by a soft minerality. Serve around 8°C.
