Slow maceration over a period of three to four weeks allows for the gentle extraction of the tannins that produce the colour and structure of this red wine. A second period of fermentation in new 400 litre barrels completes the ageing process.
A deep crimson, the nose has violets, Swiss Stone Pine and cinnamon standing out in a floral bouquet which also includes hints of toast. On the palate, a powerful wine with rustic, hearty overtones. Dark fruit balances well with silky tannins. 13.0% ABV. Serving temperature 13-14°C. Keeps 10 years from the vintage if correctly cellared.
Delicious with game, grilled meats, wild fowl and hard cheeses.
