The freshness and complexity surprise me every time. Yes, this has spent 15 months in French oak, and yet, because it is a slow wine, unfined, unfiltered, unstabilised (or maybe because it ages under a mountain?), it keeps a freshness and intensity of fruit that is just delicious. A very accessible intense merlot, in a good way.

Even if you're rather oak sensitive, like me, and even if you are in general fed up with Merlot, this will delight.

The wine is vinified following the traditional bordelaise method with a maceration period of 13 - 18 days at 28 – 32°C. Once the malolactic fermentation is complete, the wine is matured for over 15 months in barriques of French oak. Frequent racking from the lees allows the wine to be bottled without fining, filtration or other physical stabilization. This may result in slight sediment in the bottle.
