Organic certified from ex environmental biologist Raphaël St. Germain. Low intervention, manual harvest. Places a huge emphasis on biodiversity in the vineyard. Also recycles CO2 produced during fermentation to reduce levels of SO2 in the winemaking process
This beautiful wine made from the Altesse grape, is certainly not a frivolous wine. It has such complexity that it knocks Pinot Gris into a cocked hat. Having said that, do not consider it too serious to find totally enjoyable.
It has a clear pale lemon colour like a winter sunrise. On the nose it has pronounced flavours of honey and peach with hints of mango and pineapple, in the background, a minerality that demonstrates its Alpine origins. On the palate there is quite a difference. The flavours become supremely tropical with pineapple bursting through. Underneath that there is green apple and a hint of perfume. This wine has a splendidly long finish with warm honey and exotic tropical fruits - pineapple again but with notes of lychee and a hint of kiwifruit at the very end.
There is so much that this wine would match with - seafood risotto or any white meats. We tried it with terrine de caille aux raisins and it was magnificent.
Having said that it would be perfect just paired with a warm summer's evening.
