Persan is very difficult to grow (some years it just won't!) but it makes wild and wonderful reds. This is an unusual variety which can come across as excellent but a little demanding. We have chosen two - this one, from Raphael St Germain focuses on expressing the grape's wild side with less intervention. Dense tannins, dark fruit compote notes, spicy pepper (depending on the day, I get black pepper, sometimes red and green pepper too) with some herbal notes.
