Ben says (March 2018): I have only recently come to appreciate Chasselas and it is this style that finally awakened me to it's charms. The unfiltered wine allows far more interest both on the nose and in the flavours. Not only that but the usual Swiss pettiance is heightened by the slight amounts of extra yeast in the wine which gives a lovely buzz on the tongue. This is Chasselas that the UK palate can really enjoy and it will lead you to the vast range of styles that the Swiss employ with this, their favourite white grape.
