2016 was probably one of the most difficult vintages for ice wine they have ever had in the winery.
The weather just wouldn't get cold enough. And that meant a little bit more rain than in an average year and it was not easy to keep the grapes as healthy as they normally should be. Waldschütz had wait until the middle of January before they were able to harvest! Ralph, the winemaker remembers when he brought it into the cellar, because during the harvest it was the coldest day since they have been producing Eiswein.
After the harvest, the fermentation needed much longer than in a normal year. A lot more sugar than normal and not that much nutrition for the yeast in the grapes because of too much rain during the period led to a slow fermentation till the summer. The yeast was lazy and stopped at 10% by abv. Previous vintages were 11-11.5% abv.
It makes it more fruity, less sticky, and very delicious
Lovers of Grüner Veltliner (a very sensible group) will be in seventh heaven with this Eiswein. Far from sickly and cloying, this has perfect balance. The citrus acidity cuts through any possible syrupiness and elevates this wine above the norm. Chill it down for a fresh, clean delight. It goes wonderfully with pâté and as an accompaniment to sweet courses, but I prefer it as a course in its own right!
