One week pre fermentation maceration for a gentle extraction of colour and aromas without tannins.
Made in a low interventinon way with sustainable viticulture, hand harvesting and respect for nature.
Gamay in Switerland has a longer hang time with grapes on average being harvested 1 month later than in the rest of Europe. Also this part of the Valais around Sierre and Grange has the driest climate in Switzerland with the Rhône creating some cool fog in the morning and the warm wind Foehn (or cold Bise) drying everything. Dry summers and perfect mellow autumns.
