The winemaking process includes a long slow maceration of some 4 weeks to get maximum extraction of tannins and pigment to ensure structure. The wine is then aged in large oak barrels for some 18 months, during which time it undergoes the second (malolactic) fermentation, which brings softness and smoothness.
