This is the "slow, clean" style of natural wine, not the "fast, messy" style - just a little bit more of everything in the wine, more fruit, more bitterness, more acidity, more complexity, more minerality - things that the filtering, fining and sulfites reduce a little (in exchange for a clearer, more stable wine)
