- The Wine
When young, it has aromas of iris, roses, black fruits and spice, the dominant note being of violets. It has a deep ruby colour with a powerful taste. It's drinking beautifully now (2013) but will keep up to 10 years from the vintage if cellared correctly, developing its character as it ages. Serve around 15-18°C. It goes particularly well with red meats, meat dishes in sauces, particular strong tasting game dishes such as wild boar, venison and fine cheeses (especially a good crumbly goats cheese).
Ben says (July 2016): The deep ruby is lovely with superb clarity. Spicy black fruits continue to dominate but there are still a few floral hints there, especially the violets. There are also tertiary notes of turpentine and freshly laid tarmacadam. It is still a powerful wine though the tannins are very smooth and there is a tremendous elegant richness. It is, without doubt, a savoury wine with black pepper and licquorice merging with the blackberries and a few blackcurrants. The finish is long and tasty.
We have a dozen cases left in the warehouse and now is the perfect time to get some to drink.
