- The Wine
You will find the village of Chignin nestling at the foot of the Les Petits Bois and surrounded by vineyards. The Roussane grape, otherwise known as Bergeron, is well known for its use in white Châteauneuf du Pape and Hermitage. Here it comes into its own as a single varietal wine.
Pale yellow in colour it has with a wonderfully rounded and complex nose. Apricots dominate, but beneath that you find hints of pecan nuts and banana come through to create an absolute feast. On the palate you find it has such a beautiful balance, even though there is quite high acidity. Citrus and background spice and a hint of salinity create a wine that immediately made me think of the sherbert handed to Richard the Lionheart by Saladin following the Battle of Hattin. The finish on this wine goes on and on as the acidity plays with your taste buds - as the flavour dies the acidity brings it back again and again. This is a wine to linger over and explore.
Try it on its own, with crayfish étouffée, or with arctic char (omble chevalier as we call it here) with rose pepper and lemon.
