The freshness and complexity surprise me every time. Yes, this has spent 15 months in French oak, and yet, because it is a slow wine, unfined, unfiltered, unstabilised (or maybe because it ages under a mountain?), it keeps a freshness and intensity of fruit that is just delicious. A very accessible intense merlot, in a good way.
Even if you're rather oak sensitive, like me, and even if you are in general fed up with Merlot, this will delight.

What to expect:Intense dark and brooding fruit, with a surprising freshness
Serving Suggestions:Don't think you have to stick with the usual "intense wine" matches of venison, duck, hung beef. This has a lot of flexibility, thanks to the unfiltered fruitiness. Easy to enjoy solo, easy to enjoy with lighter dishes, and especially delicious with ham on the bone.
The wine is vinified following the traditional bordelaise method with a maceration period of 13 - 18 days at 28 – 32°C. Once the malolactic fermentation is complete, the wine is matured for over 15 months in barriques of French oak. Frequent racking from the lees allows the wine to be bottled without fining, filtration or other physical stabilization. This may result in slight sediment in the bottle.

Bouquet: An intense inviting fruity bouquet of plums and blackberries. With hints of liquorice, coffee, and mint.
Palate: Smooth, rich, full-bodied and still fruity. It combines elegance and a superb structure with ripe and smooth tannins. Long with a good balance on the very persistent finish.
