- The Wine
The wine estate Waldschütz is located in Elsarn at the southern slope of the Manhartsberg.
The region is dominated by a high-lying area known as the Heiligenstein, documented as long ago as 1280 as “Hellerstein”, or Hell Rock, because of the burning sun it enjoys which is perfect for ripening grapes. Daytime sun warms the hillsides while at night the vineyards are cooled by the river and fresh breezes from the north. White grape varieties develop a spicy aroma, a fine acidity and a crystal-clear mineral character. Reds develop fine berry tones with delicate fruit and are among Austria’s most elegant.

Serving Suggestions:A fantastic wine to drink on its own, but also fantastic with grilled fish - seabass or red mullet if you can get your hands on some, but trout will do too. Marinate as you like - for trout I would just cram it with herbs and lemon slices - for seabass perhaps marinated in oil, soy, lemongrass and ginger - and for red mullet, well, I love it so much I eat it au naturel :)

In the nose you feel the freshness. A fresh citrus start and a burst of flowers - wild rose, lilac, mimosa, depending on the person. Classic Riesling peach and then lemon sherbet.
On the palate an upfront zing which warms up and mellows in the finish - again peach and citrus, and quite warming spice in the finish.
