The premium Fendant from Simon Maye & Fils.
The grapes for Moette come from steep terraced slopes at Ardon to the west of Sion and not far from the Rhône. Soils here are principally well drained limestone and there is excellent exposure to the sun. The grapes are harvested manually and after careful pressing, alcoholic fermentation takes place slowly at 20°C, without the traditional malolactic fermentation. The wine rests on the lees until the beginning of March and is bottled in April.
A very pale yellow-green, with a nose of wisteria, citrus and asian pear. Plenty of clean crisp citrussy fruit on the palate, underpinned with a vibrant minerality and a fine salty acidity. This Fendant is built for the long haul, keeps up to 10 years, and is a perfect partner for freshwater fish and seafood generally.
Works well on its own as an apéritif.
