- The Wine
Grown around Chamoson on alluviual soils of sand and gravel with some clay and silt. The grapes were harvested manually at 92°Oechsle at a low yield of 40 hl/hectare. They were gently pressed, and fermented slowly at a controlled 20°C, matured on the lees in barrel with regular bâtonnage and bottled after 2 years. Ample and complex with flavours of pineapple and nuts, this is a truly exceptional wine which goes well with terrines, fish dishes and soft cheeses. Drink now. Serving temperature 12°C. Acidity 5.3 g/litre. ABV 12.5%.
Ben says (July 2016): A beautiful mature Swiss Chardonnay unlike any you would find in the New World. The grapes are from vines at least 40 years old. This is hand-crafted expert artisanship at its best. It is a glorious burnished gold with sparkling clarity. A joy to behold. Tropical aromas dominate the nose with plenty of banana and kiwifruit. There is a background hint of toffee and hazelnuts. This is as unctuous as a non-sweet wine can be. The tropical flavours continue on the palate with pineapple joining in the party. The oaking is very elegant and not at all overpowering. Simon Maye is a superb winemaker and this shows off his skills perfectly.
With less than six cases left, now is the time to immerse yourself in this delight.
Ben says (October 2017): Still as good as last year and will continue to delight for a few years yet. Chardonnay lovers should snap this up.
